WHere is a simplified version of a beverage featured on a new cocktail list. This is a party-sized prepared mix that is loaded full of tastes of a holiday season, making it ideal for your celebration. Save the extra citrus syrup for brunch beverages, puddings, or for more rounds of the drink.
The Bikini Cocktail
Yields 10 people
Ingredients for the Clementine Syrup (produces 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g caster sugar
To make the Premix (produces 850ml, serving 10)
400ml premium vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml citrus syrup (see above)
Whole cranberries, to garnish
Mandarin essential oil, to finish
Instructions
Making the Cordial: Combine the listed components into a saucepan, heat until it reaches a light boil, mixing to dissolve. After that, take off the burner and let it to cool down completely. Transfer into a sealable bottle, seal and refrigerate it in the fridge, it can be stored for up to a month.
Preparing the Cocktail Base: Pour all the spirits and syrup in a large bottle, allow it to infuse for 60 minutes, then strain best through muslin, making it perfectly clear.
To serve: Measure 85ml of your cocktail base to a stirring glass containing ice, gently stirring carefully for one minute to chill. Pour into an cold coupe glass or equivalent, garnish with some cranberries and complete it by giving it a light spray with the mandarin essence over the drink.
